My name is Aida Collazos and I am a Spanish girl born in Madrid. I’ve created this workshop so that people like you can prove that you can cook as deliciously as your grandmas, and you will do it by cooking one of my grandma’s most famous recipes: the real Spanish tortilla de patatas.

I have been cooking for as long as I can remember, and it all started in Juanita’s kitchen, the most special place in my grandparents’ house. My grandma’s kitchen. She was, without a doubt, the best cook I have ever known, not only for the taste of her dishes, but also for the generosity and love that radiated from her cooking. I remember with joy the excitement I felt when I arrived at her house, knowing in advance that she was the one cooking, because the whole doorway was impregnated with wonderful and totally unique smells.

Although I am an Environmental Engineer and an Industrial Organization Engineer, the truth is that my degrees give me a routine that doesn’t allow me to be really happy. Engineering is very nice, it is very necessary, but after several years of working as an engineer I realized that it is not my vocation. Thanks to her, I learned to cook in the traditional way, the old way, real food, recipes that have preserved their origins through generations and generations. I discovered a great love for cooking and this was one of my main motivations in creating this course since a few years ago I discovered that I have an even greater passion than cooking itself: sharing my knowledge with others.

I want to share with the world all that she has taught me over the years, because I want her love to continue to be present on the tables of many families. Grandma’s style! 🙂
